160g Butter

160g Golden granulated sugar

2 Large eggs

160g Self raising flour

2 Orange

1/2 tsp Bicarbonate of soda

4 tbsp Icing sugar

40 g Dried cranberries

1/2 tsp Ginger powder
Directions
This recipe uses a 2lb or 900 g loaf tin.
I reccomend a hand mixer to cream the butter and sugar.

OnePre heat the oven to 190°c Cream the butter and sugar together until smooth and fluffy. Add the orange extract to the eggs and gradually beat into the butter mixture. |

TwoZest both oranges add this and the juice of 1 orange to the Sift in the flour, bicarb and ginger and stir till everything is incorporated. The mixture should be quite loose. |

ThreeAdd the cranberries and pour the mixture into a lined loaf tin. Cook for 30 minutes until a skewer comes out clean. Leave in the tin to cool for 10 minutes. |
