2 Orange
1/2 tsp Bicarbonate of soda
4 tbsp Icing sugar
40 g Dried cranberries
1/2 tsp Ginger powder

Orange and cranberry drizzle loaf

Moist fruity loaf cake.

This recipe uses a 2lb or 900 g loaf tin.

I reccomend a hand mixer to cream the butter and sugar.

Steps

One

Pre heat the oven to 190°c Cream the butter and sugar together until smooth and fluffy.

Add the orange extract to the eggs and gradually beat into the butter mixture.

Zest both oranges add this and the juice of 1 orange to the
mixture and bring together.

Sift in the flour, bicarb and ginger and stir till everything is incorporated. The mixture should be quite loose.

Add the cranberries and pour the mixture into a lined loaf tin. Cook for 30 minutes until a skewer comes out clean. Leave in the tin to cool for 10 minutes.

While cooling mix the juice from the other orange with the icing sugar. Once cooled stab the top of the loaf with a fork and pour over the orange icing mix. Leave for 5 minutes.

Cut off a slice add some butter to a frying pan and cook until brown.
